Leftovers from last week’s carrot and clementine soup can easily transform into a delightful dessert or refreshing dish. The fruit pulp saved from the strainer adds both flavor and texture to this simple creation.
Ingredients:
Clementine purée (or finely chopped fruit)
Dried figs, finely chopped
Dried grapes
Hazelnuts coated in raspberry syrup
(Optional) fresh mint leaves
Preparation:
Base:
Spread the clementine purée on the bottom of a plate. If purée isn’t available, finely chopped fruit works as well.
Toppings:
Sprinkle with finely chopped dried figs and dried grapes.
Add the raspberry-coated hazelnuts for sweetness and crunch.
Garnish:
If you have fresh mint leaves, sprinkle them on top for a refreshing touch.
