This dish draws inspiration from Laurent Mariotte’s Je cuisine avec 3 ingrédients, but due to limited kitchen tools and ingredients, it was prepared in an improvised version. The combination of feta and seasoned fava beans creates a light yet flavorful meal – simple yet special.
Ingredients:
Frozen fava beans
Zest and juice of 1 small lime (use ¼ of the lime’s juice)
Truffle olive oil (or any good-quality olive oil)
2 large blocks of feta cheese
Herbes de Provence
Paprika, chili, oregano spice mix
Preparation:
Prepare the fava beans:
Boil the frozen fava beans for a few minutes, then peel each bean individually. This removes any bitter notes, enhances the sweetness, and gives a creamier texture.
Grate lime zest over the beans and squeeze the juice of ¼ lime. Drizzle with a little truffle olive oil.
Pan-grill the feta:
Place the feta blocks in a hot skillet. Sprinkle with Herbes de Provence and the paprika-chili-oregano spice mix.
Carefully flip the feta using a large spatula, as it tends to crumble. Season the other side as well.
Ideally, caramelize the top under a grill, but a skillet works just as well.
Assemble and serve:
Place the fava beans in a serving dish and top them with the grilled feta.
Scrape up the caramelized bits from the skillet and sprinkle them over the beans.
Drizzle generously with olive oil.
