Quick Dinner from the Fridge

With prepped ingredients and a touch of creativity, you can whip up a delicious dinner in no time. The treasures of the fridge and pantry come together in perfect harmony in this simple yet flavorful meal. Discover how to make your weekdays quicker and more exciting!


Steps to a Quick Dinner

1. Prepped in the fridge: I save time on weekdays by chopping and storing vegetables in advance. Larger amounts are frozen, so I can use them whenever needed.

2. Heating bread: I take three slices of leftover bread from yesterday and heat them in a pan. Not to make toast, but to warm them up and let them soak in olive oil.

3. Straight from the fridge: On the bottom shelf, I keep a large box with small bowls of:

  • Lettuce,
  • Spicy pickled fava beans,
  • Tomatoes – the Avignon variety has a mild tanginess that balances the spice of the fava beans.

4. Extra flavors:

  • A leftover piece of Roquefort cheese – if unavailable, regular blue cheese works just as well.
  • Guacamole spice mix: paprika, pepper, and garlic – a perfect match.
  • A piece of chorizo on the verge of going bad is diced and thrown into the hot pan after the bread is removed.

5. Serving: The spicy, flavorful fat from the chorizo is poured over the salad. I add a dollop of hummus to the bread for extra creaminess.

Market vs. Discount Stores

I love this type of meal: fresh, varied, and creative. However, going to the market twice a week isn’t always feasible. Our local market is only slightly more expensive than discount stores, similar to buying higher-quality products at the supermarket. But the reality is, Lidl and Aldi’s frozen selection fits my budget better.
